The wines for this rosé come mainly from clayey limestone soils in the coolest regions of Haute Provence. Oak and olive groves not only protect the vines, they actually seem to nourish them. The altitude of the vineyards mitigates the summer heat, allowing the grapes to fully ripen without producing excessive amounts of sugar and eventual alcohol. A blend partner comes from the calcareous foothills of the Sainte-Victoire mountains. Wines that always impress with their liveliness and persistent minerality.
In La Londe des Maures, a few meters from the Mediterranean, there are Cinsault vines that give the finished wine subtle salty and aniseed notes. Harvesting takes place between 3 a.m. and 9 a.m. The lower temperature of the grapes reduces the risk of oxidation and thus preserves the aromas. Grenache and Syrah are processed together, allowing their personality and benefits to blend. The reductive character of the Syrah complements the oxidative personality of the Grenache beautifully.

The grapes for this classic are harvested at night to avoid oxidation and preserve as much freshness as possible. The higher altitudes of Provence at the foot of the Montagne Saint-Victoire are crucial for the minerality. The expansion takes place in steel tanks.
