The grapes for the Ortswein Prellenkirchen Samt & Seide are selected from a total of 20 plots, all of which are on the southern slope of the Spitzerberg, namely in the vineyards of Spitzer, Roterd, Panholzer, Holzweingarten and Kranz.
Vineyards that are between 15 and 35 years old provide the grapes for this wine, with the older vines responsible for the "silkyness" and the younger vines for the "velvetty" of the wine. What they have in common is the precise character of the limestone soil, the fine berry aroma and the refreshing acid structure.
The velvety tannins and silky texture of this wine are proverbial. It is the most charming expression of the Spitzerberg.
The grapes are hand-picked and each overripe berry is neatly removed. In the cellar, the grapes are lightly crushed and partly macerated with the stalks in open fermentation vats. This leaching is very gentle and completely pump-free.
Fermentation starts after a few days thanks to wild yeasts. The spontaneous fermentation takes place very slowly and at room temperature, the mash is neither heated nor cooled. This guarantees very precise and aromatic wines. Some of the grapes are foot-stomped.
After about 20 days, the wine is pressed and then matures in 1000-liter wooden barrels and 3000-liter wooden fermenters, whereby no new wood is used so as not to cover up the fine fruit of the Blaufränkisch.
During the 20-month maturation, the wine is only moved once and finally bottled without filtration.
