This Edizione Rossa is a special red wine that is second to none thanks to the selection of the best Cabernet Sauvignon barriques after about a year of storage and then another year of aging in barriques.

Its complexity in fragrance and taste and above all the power and versatility make this Amistar Edizione Cabernet Sauvignon particularly interesting for demanding moments.

Eye: Bright garnet red.
Nose: Firm nose, ripe black and some red berries, tobacco and spicy oak, dried flowers and herbaceous nuances, some juniper.
Taste: Ripe, very juicy and spicy fruit, some tobacco and nutty oak, smoky and roasted notes, fairly prominent, ripe, fine tannins, minty and ethereal notes, also some pepper and juniper, good depth, juicy and spicy on a very good finish.
layers: Several locations, including Kaltern, Kurtatsch and Laives, between 250 and 450 m above sea level. M
Reading: Different harvest times due to the different locations between the end of September and the beginning to the middle of October (= dry berry harvest) Amistar concept requires a minimum of 19.0 °KLM.
Yield: About 50hl/ha
Expansion: Destemming, traditional maceration in stainless steel tanks at controlled temperature. Dejuicing of about 30% to create a more extreme skin to must ratio. That means more skins and much less must and thus an ideal maceration or extraction for the Amistar concept. After fermentation, the wine is removed from the pomace and stored in stainless steel for MDF (biological acid degradation). After dismantling, everything is stored in barriques and after about a year the best batches of this Cabernet Sauvignon are assembled and stored in oak barrels for a further month until they are filled.
Enjoyment:

This red wine selection goes well with sophisticated dishes such as Bistecca Fiorentina, roast pork, etc.

We also recommend trying Amistar Edizione with special dark chocolate (e.g. from Gobino Piedmont ~Amarissimi 60% cacao with cacao chips from Ghana, Ecuador Arriba).

Also a combination worth trying with cigars>possibly a COHIBA~Esplendidos Churchill.
