The Appassimento method refers to an Italian wine-making process of drying freshly harvested grapes in the open air, mostly on straw mats, in order to allow some of the water in the berries to evaporate and thus achieve a higher sugar concentration. Ripasso and Amarone are the most famous exponents of this methodology. The Gorilla Appassimento is new and probably unique in terms of price, for which the grapes were laid out on straw mats for about 10 days to ensure a moderate increase in alcohol. A "small Amarone" for connoisseurs with high demands at a sensational price. Mature, rosy and full-bodied wine. The perfect balance between soft tannins and acidity.
